Pumpkin Pancakes

3 c. TT Whole Grain Breakfast Mix
2 Tbl. sugar (or Splenda)
2 eggs (or 1/2 c. egg substitute)
2 c. buttermilk
1-1/2 c. Tbl. Vanilla
3/4 c. canned pumpkin
cinnamon, ground cloves & nutmeg to taste

Combine all ingredients with a whisk. Cook on a heated griddle sprayed with Pam. Turn pancakes when bubbles begin to break. Makes approximately 20 pancakes.
Freeze the extras to reheat in the microwave for a quick breakfast.
